    A special thank you to our neighbor and dear friend Janet Perry for the beautiful flowers. She has a great gift for growing flowers and plants and her yard is incredible. I took two of my grandchildren over to visit Chuck and Janet and they were amazed at her yard. In fact they didn’t want to leave.

    Irish Potato Pie

    3/4 cup sugar 1/2 stick butter 1/4 teaspoon salt 2 eggs, separated 1 1/2 cup hot mashed potatoes 1/2 cup milk 1 tablespoon each of vanilla and lemon extract 1 unbaked pie shell Preheat oven to 450°. Add sugar, butter, salt and beaten egg yolks to mashed potatoes. Add milk and flavorings.

    Cold Springs

    Allen has a long and colorful history. The earlier Cold Springs name came long ago when settlers heading west passed through this area on their way to (where else?) further out west. Many stopped here because of the cold springs. Some simply stayed a bit, camping on the river.
